Prunier Caviar Pasteurised in a Jar - Acipenser Baerii
Pasteurised caviar is particularly suitable for dishes that still require a higher temperature, such as the classic caviar spaghetti, or for use in warm sauces. It is also perfect for garnishes such as canapés or cold starters.
Pasteurisation increases the shelf life. After opening the jar, however, the pasteurised caviar should be processed just as quickly as the fresh caviar.
The Siberian sturgeon, Acipenser Baerii, is one of the most magnificent sturgeons. Like its Caspian Sea cousins, it can grow up to three metres long and weigh up to several hundred kilos. Baerii sturgeon thrive particularly well in aquaculture, reaching maturity after 6 - 8 years and then yielding Prunier caviar. This caviar of the highest finesse and unique character is the archetype of Prunier caviar. It has very clear, generous aromas of walnuts and almonds and a beautiful long finish.
