The birth of a new culinary discovery
In 1872, Alfred Prunier opened the first champagne and oyster bar in the world, in addition to the Paris Opera Garnier. Due to the aggressive urban planning of that time, Prunier had to start a few years later moved and built a new restaurant near the Madeleine around 1890. The Russian clientele became loyal at the beginning of the 20th century and regular patrons of the Prunier restaurant. To meet their needs, Russian caviar became an integral part of the menu alongside oysters and champagne.
In 1918, Alfred 's son, Emile Prunier, took over the worldwide exclusivity of the Russian caviar from the traditional German companies and for the first time made Paris the world center of the world
Caviars. When Emile Prunier discovered a host of troublemakers in the French River Gironde in 1921, he sold his monopoly, laying the foundation for the French caviar industry.
Thanks to his vision and the great entrepreneurship of Emile Prunier, Paris remained the center of world caviar until the mid-1980s. The Parisian passion for beauty and elegance positioned. Finally, the fine caviar is the world's ultimate and most luxurious food. The restaurant Prunier in Victor Hugo Nr.16 has been serving the finest caviar since its opening in 1924 until today. Today, with an annual production of almost 40 tonnes, French Caviar is again considered one of the best caviare in the world.
