Gravlax literally means "buried salmon". This natural method of preserving freshly caught salmon for several weeks was discovered by the Scandinavians centuries ago. We have adapted and refined this tradition for ourselves. After smoking and paring, the Balik sides are rubbed with a mixture of dill, salt, pepper and sugar and then kept in the fridge for at least 1 day to marinate. After that, the pickled sides are cut and packed.
To accompany Balik Gravlax, we recommend our delicious Balik Mustard-Dill Sauce and Balik Bread.
Parried, cut into tranches and portioned - the "small portion" from the whole Gravlax side.
