For the preparation of Balik Side Classic, specially selected salmon (Salmo Salar) are mildly smoked in our traditional smokehouse. The whole sides of the salmon are then painstakingly parried by hand and the bones and smoked skin are removed. Because the exquisite, original flavour of this remarkable salmon develops best when the sides are cut into fine tranches, we offer Balik Side Classic in the piece or pre-cut.
Each pack comes with detailed cutting instructions with suggestions for serving and arranging. Balik Side Classic tastes best when you combine it with just a few selected fresh ingredients, for example some crème fraîche and black pepper from the mill.
This whole salmon side is mildly smoked and parried in one piece.
